I travel through Oahu on business frequently and I find another good place to people watch is the north shore. I think the north shore is a little less commercialized/touristy and more fun overall.

I also enjoy the windward side of the island. Just follow the highway around past the north shor and past the polynesian cultural center. The vegetation on that side of the island is much more lush than the leeward side and the beaches are much less crowded. Of course, the beaches aren't a long as the leeward side, but I enjoy the "old Hawaii" feel of that part of the island.
