My thought is that when replacing the valve-guides, you can't get the valve exactly positioned and seated where it was previously, so you need to re- surface/cut the valves & valve-seats for a perfect fit/seat/seal.Please replace ALL the valve guides!!!

Also, anything else I should check or replace while doing the head-gasket?

Neil..yes you are correct!
When I Worked for Mercedes They Required the Valves and seats to be recut when valve guides were replaced..Please inspect the Exhaust Valves for pits and stem wear

When ever the 104 head is off I would recommend to reseal the rear heater pipe/o-ring and to clean and or update the EGR pipe!
LOTS of room with the head off

Since the Head is off..send it out for some flow work.. and a set of headers ..port matched
