There's no such thing as adjusting disc brakes. Until the pads are seated, they will not hold as well as the seated pads that you removed.

The other thing that would make the pedal feel different would be air in the hydraulic system. Since you only replaced pads and rotors and did not open the hydraulic system, this should not have changed.

You are flushing your hydraulic system annually aren't you. If not, then when you moved the pistons in their bores, you might have forced the seals over some crud. Annual flushing will eliminate the crud.

Is the fluid clear looking in the reservoir?
