Latkes. Shredded potato and onion, bound with eggs and matzo meal, salt and pepper. Shaped into small patties and fried in oil, it's a traditional Channukah dish. We modified ther recipie a bit, and instead of making lots of little patties, we make a skillet sized latke "pie" and then cut it into wedges, using less oil in the pan. To flip it, you put a dinner plate over the pan when the bottom is well browned and set, and invert the latke onto the plate, then slip it back into the pan to crisp up the other side. Serve with applesauce or sour cream.
