Hehe, "Dirty's"...now those were good burgers. Long ago, TJ (one of the cooks) would stand by the griddle, one ear to what ever sports event could be picked up on the AM radio, making little balls of hamburger meat and tossing them into a stainless steel pot. When an order came in, TJ would pick out however many burger balls he needed for the order, put them on the griddle and smack them each flat with one splat of a big metal spatula. When I was a squeaker, dad always ordered me two 'sissyburgers' (I was afraid to talk to TJ, he was huge and black as night) — cheeseburgers with nothing but meat, cheese and the bun. Gawd, the grease from those burgers made a soup in the bottom of your plate that you sopped up with part of a bun or your french fries.
TJ died in the early 80's and the health department put the kibosh on a pot full of unrefrigerated burger balls over 15 years ago. It's never been the same since.
