Ride height is a function of the spring, not the shock. So altering the shock composition (ie, hard in back, soft in front) won't cause the rear to sit any higher.
However, some shocks, including bilsteins, have adjustable spring perches. Whereby the spring seat can be raised a few mm's or lowered to help fine tune a ride height. Unfotunately, this only applies to cars with coil over suspensions, and Mercedes don't usually qualify.
