I too have done a lot of brakes. When I did my first MB brakes, I noticed a few things. One is that it doesn't take any special tools and things are relatively straight forward.
After things are apart, make sure to clean out the caliper grooves for the new pads really well. Use a wire brush to get all the impacted dust and grit out of there or else the new pads won't fit over the rotor.
In lieu of MB antisqueal paste you can use neversieze on the pad backs.
I've been able to salvage the wear sensors to put on the new pads. They can be reused if not worn or broken.
There's not a lot of thickness to the rotors for turning. If the surfaces aren't scored too badly and there's enough thickness, they can be reused as is. Otherwise if there's any question, replace them.
