The thermostat establishes the LOWEST operating temperature. The HIGHEST operating temperature is established by radiator heat transfer capacity and (at idle and low speed driving) fan air flow.
Old coolant won't affect operating temperature. It will just increase internal cooling system corrosion including the block and heads.
As stated, your temperatures are perfectly NORMAL!
