Morels are my favorite. Soaked in Cognac for a brief period is a good way of preparing them without overloading the dish with the Cognac flavor. I believe one of the deadly active chemical in most poisonous mushrooms is methyl hydrazine. Nasty stuff. Also used as oxidizing agent for rocket fuel.
