I would bleed all four brakes, if for no reason but to get rid of the old fluid. I just changed the fluid on my C220 by bleeding the four brakes. I started by using a syringe to remove as much fluid as I could from the reservoir. I can't give you an answer on the shields but if they both serve the same purpose, I would only use one set.
