I am seeing 2 different gaskets for the thermostat. What will I need to replace my thermostat?

Thermosat and how many gaskets?

Not much

You will need a t-stat, a gasket, and a 10MM tools. Goes quick and easy.

You are needing the tstat and the doughnut type ' gasket'...
the other one shown in paper is for replacing the tstat holder where it attaches to the block.
