124 idle "hunting"

I started the Scalded Dog before I pulled the dash and noticed a very odd behavior. The engine would idle fast (1Krpm) then settle down to about 750 then back up to 1k. It cycled like this until I shut it off. At low idle it acted like it wanted to die. I shut it off and proceeded with the dash pull/pod replacement. When I started it there were no vacuum lines disconnected. It acted like a gasser w/ a goofy automatic choke or something. It was if the engine was trying to find its "place" to idle. I won't worry about it until the pods are replaced and I get back to the engine issues. Any ideas as to the cause/solution?
