Someone around here regionally acquired an air cooled franklin some years back. He was observed many times traveling with it at the modern highway speed limits. It did have the original power train. It was a really nice restored example. His car but I probably would not have used it like that.

I took a modern van to Hershey one year. As I pulled onto the highway to go home. There was a really old car well ahead that I could not identify. I could not catch up with it with that van. I was going over the speed limit but not recklessly so. Until we hit the toll booths. It was a late twenties rolls Royce. High and boxy as well as being driven fast.

On the parts / tools front, I offer the following suggestions.

#1, highway miles are the easiest miles for a car as long as you keep the speed reasonable. If your car does fine in stop & go around town, it will probably be just fine on a road trip. The only exceptions to this are the wheel bearings / tires, make sure they are all good and set right.

#2, Bring all the routine maintenance up to date, but don't go overboard. Don't fix it or replace it unless it is broken! My 1987 300TD probably has the original water pump still installed, no issues. Although water pumps DO fail, they are also a fairly common part to find or get shipped in. The same goes with just about everything else, you may have to spend a day or three waiting for parts, but you CAN get them.

This is what I would bring as far as parts:
Fuel return line hose (between the injectors)
Strip fuse for the glow plug relay
Spare fuses
Voltage regulator for the back of the alternator
Both fuel filters
As mentioned, engine oil / filter(s)
Gallon of pre-mixed coolant, another gallon of plain water
Set of belts
Spare bulbs for the brakes and turn signals
Quart of ATF

Tools:
Original car jack and lug wrench and the tool kit
Tire chocks / blocks
Everything you need to change the parts listed above
Everything you need to adjust the engine valves
Small and large vice grips
Large forceps to reach things dropped into a crevice
Magnet on extending handle for same or to get something from under the car
Headlight aka Dorklight - the LED-type flashlight that you wear on a strap around your head so you are hands-free to make the repair
Length of small wire if you need to wire something together
Some duct tape
Zip ties
Various sizes of hose clamps, from small enough for the fuel hoses up to the radiator hose size
Tire pressure gauge
Rags, and disposable rubber gloves
Copy of the service manual(s). Paper copies would be awesome, electronic version on a laptop computer would work too.
Cheap digital voltage / ohm meter

Old stuff can attain speed however it can't do it without rapidly wearing out unless the drive line has been updated with modern materials / oiling systems.
