I've been told that when you buy a "new" car, it's wise to have the oil changed around 1,000 miles to remove any loose metal "shavings". Is there any validity to this??

Some people feel differently about this so check with your dealer. The engine is filled with break in oil when new.

The only answer I can offer about "over-servicing" your car or truck is; it's your money! Do you burn money to keep warm?
Most people follow the factory service schedule(to some degree). Mercedes Benz says to change the oil after 10-12k miles.
