Rice poll

Most people like rice, but I've never been a fan. Rice always seems to try to fill too many roles. Sometimes rice is content on the sidelines, but sometimes rice tries to grab the spotlight. Rice often soaks up the flavors and takes the character of the things surrounding rice. Today, it seems rice is trying to fill a bigger portion of the plate. How will rice stand on rice's own?

I guess it remains to be seen which rice will be most popular. Wild rice? Long-grain rice? instant rice? brown rice? sticky rice? sushi rice? white rice? Seems to me that rice by rice's self has very little to offer. I guess we'll be stuck with the rice desired by the items around rice. Shame.

I'm talking 'bout it being a CON; d rice. If only rice had a spine to deflect those seeping flavors.

boneheaddoctor 01-19-2005 03:45 PM

Depends on the dish.....Basmati rice has its own delicate flavor.....

different rices for different things.....

MTI 01-19-2005 04:04 PM

Wild Rice . . . not rice.

Here in the islands we take our rice seriously. Basic rule here is that it should not come in a box and should not be from anyone's Uncle. ;)

There are different grains for different uses. You wouldn't use jasmine for sushi or risotto.

The price per pound of rice is largely based on the condition of the individual grains. The fewer broken grains, which leads to more starch being released in the cooking fluid, the higher the price for the rice. The "sticky" rice may have up to 50% or more broken grains and usually is the cheapest rice in the market, where as the one from "Uncle" has less than 5% broken grains.

koop 01-19-2005 04:23 PM

I think Rice's role, in the meal, should be diminished not promoted. Rice, as a foodstuff, is not qualified to occupy such a large portion of the plate and given our past experience with Rice, should probably be eliminated altogether.

andersbenz 01-19-2005 04:25 PM

I use rice in a lot of the meals I prepare. I buy Basmati rice at the local Indian food stores in bulk.

I presume you're discussing brown rice, which might be considered a condiment in certain dishes with a foreign appeal.

mzsmbs 01-19-2005 04:33 PM

I love basmati and stand alone rice seems very good. it's only when it hangs out with meats, oh beef, chicken, elephant, what not.. it takes on this bloody flavour that i don't care for...

MTI 01-19-2005 04:37 PM

mmmmm, elephant . . . hold the tusks . . .

Naughty boy.

Old300D 01-19-2005 06:13 PM

Rice was never meant to be a solo dish, and never to be the focus of the meal. This rise of rice's prominance must be resisted; nothing good will come of it.

MTI 01-19-2005 06:18 PM

Who can resist a plate of "dirty rice" served up with a big, hot spicy sausage? It's just what the doctor ordered.

Veloce300DT 01-19-2005 07:23 PM

Im not a big fan of plain white rice... I do however deal with it when mixed with vegetables (usually stir-fry), or parmesan chesse. I also dont really mind it plain when splashed with a little soy sauce.

Flavored rices on the other hand, I LOVE. It would be hard to point out a number one favorite amongst all of the variants that I love (wiild rice, fried rice etc.), and recipe combinations. But if I were forced to pick one, id go with Spanish rice, with some sliced tomato and tomato sauce. mmmmm

Botnst 01-19-2005 07:31 PM

I like rice as a double entendre.

I like the original, earthy flavor of brown rice, that expresses itself strongly and can easily stand on its own.

But I also like the flavor absorption characteristics of white rice. True, it is deprived of it's natural exotic flavor and character, but it easily adds balance to a complex dish, absorbing flavors from each constituent and returning a strong structure for the looser items.

MikeTangas 01-19-2005 07:34 PM

The absorption is what makes rice & gravy so good.

That was delicately nuanced -- kudos.

Thanks. I try to do that when I write as often as possible, but it doesn't usually work so well and when it does, it seems to pass unnoticed. Fortunately in this case, it was slow pitch with a big ball.

It's just a game I play and mean no harm.

Persians have a way of doing Basmati rice that I love, but just can't get right - anybody know the trick?

I don't like rice. People throw it at the bride and groom at weddings, and then the cute little birds fly down and eat it, and then their stomachs get all distended, and sometimes it kills them, and that makes me very sad. :(

........*Yaaawwwn*..........

Oh, pardon me. I almost dozed off there for a second.

is it like dirty rice??? it's the spice combo...

Ara T. 01-20-2005 01:13 AM

Persians throw a bunch of butter in the rice, and put bread on the bottom of the pan and i guess it gets all crunchy and tasty...i think they use saffron too.

Benster Tom 01-21-2005 11:52 AM

I like rice served with a main entree

Grilled or Baked Pork Chops with Rice and cream gravy
Chinese food served with Rice

In Texas... Rice with cream gravy and bisquits are exceptionally good. :D

THey use oil when its cooked, but they also use a bit of butter and safron....

Its good I know............same with the afgans....they have a certain way of doing things.........just can't duplicate it.....even after numerous time of having the process explained to us.

Flash Gordon 01-21-2005 05:03 PM

Ah, rice, the staple food for Asians :) I have travelled to many places in Asia in my younger days, including the jungles of Borneo. There are so many ways of spice up the rice and ,yet, at the same time many people prefer to eat the plain rice with dishes. Different regions in Asia, prefer different kind of rice. To me, it is always fun to taste the different ways of cooking the rice :)

djugurba 11-04-2006 02:56 AM

Anyone having second thoughts about the extra helping of rice???

I would not eat Rice.

ForcedInduction 11-04-2006 03:19 AM

I hate rice, but it's got more nutritional value than corn.....

Botnst 11-04-2006 08:23 AM

Wont be long before a new chef tries a new menu.

Kuan 11-04-2006 09:13 AM

Man you can find no fewer than 8 kinds of rice at my house at any given time.

Basmati, miniature basmati, Japanese, risotto, bhutanese, jasmine, broken rice, wild rice, brown rice, ornamental rice, parboiled...

Wow. Another Jasmine Rice freak. I think once you have had Jasmine, you won't go back to the other crud.

I tend to like it with butter too. You start with rubbing butter into Jasmine till she turns yellow. Then you dump a rare steak on the plate. By the last bite, Jasmine looks all red.

Can't keep a chinaman away from rice. :) Rice with everything! Did you parents get KFC and make rice at home?

And crispy pork skin. :D

Hey it's OK, I can say that.

I have rice with steak because it is simple. 2 cups of rice, 2 cups of water, push switch. With a potato, you have to wait longer then peel it, take the insides, mix with butter and a hint of sour cream. My parents ate at KFC sparringly and didn't take any home.

Or pork floss sometimes isn't bad.

Dude microwave the potato. Poke some holes in it, wrap it up in a towel, and microwave it 6-8 minutes.

I know. But I am lazy to peel and smash the potato and mix. Rice is scoop and mix with butter. :D Personally, I prefer a potato since I like the hint of sour cream on it with bacon bits. Just being a lazy bastard.:laugh3:

OMG you just need to eat it like a gwai loh. Split the top and dump your butter/sour cream/bacon bits in the top. Smash the insides around a bit with your fork and scoop it out!

Larry Delor 11-04-2006 10:12 AM

I like rice enough to own a rice cooker. ;)

Just yesterday I tried a rice dish out at the local deli.... It has yellow curry in it, along with nuts and raisins and bits of carrot - maybe more...haven't fully disected it yet...mostly because my 80 year old German grandmother confiscated it. (She's not one of those old farts that likes their food bland).

Rice is also handy for when I feel like eating several hundred of something. :D

TheDon 11-04-2006 10:13 AM

it has to be made the right way.. none of thise fluffy "white people rice"

my mom has cooked columbian food since she married my step dad and how the rice is made is the only way i eat it

razor thin slices of garlic, some extra virgin olive oil, and the appropriate water amount .. and cleaned white rice... it comes out soo good..

H-townbenzoboy 11-05-2006 11:45 PM

You'll find that rice is an important ingredient in southern cuisine. It's what you serve gumbo or etouffee over, it's found in boudain, and of course there's dirty rice, all cajun/creole dishes. Down home meals like smothered chicken or smothered steak with gravy are served on a bed of rice, and in Texas at least from what I've seen, a bowl of hot, steaming white rice with butter and a little salt can serve as a substitute for oatmeal or grits at breakfast.

Botnst 11-06-2006 07:19 AM

Rice is good when poured over Texas chili.

rg2098 11-06-2006 07:54 AM

Jasmine rice does indeed kick total ass. It was quite a change from the Basmati rice I've been used to my whole life.

Pakistani rice, for dessert, looks bright yellowcooked with saffron, is sweet and tastes real nice...

My mother puts rice and herbs in tomato soup. It's pretty good I must say.
