I don't get to excited about dinner but

Tonight I am going to a wild game dinner.

12 guys and gals
Elk, Caribou, Pheasant, Deer, Moose.
and a brewery to ourselves.

I'm pumped and wifey does not drink beer so you know what the means?

Meds riding shotgun tonight!

Ah, but will meds ride shotgun in the morning or will they take a front seat?

Sounds like a fun night. I've only ever had deer out of that list, I think maybe moose, but never elk, pheasant or caribou.

Elk is by far my favorite meat:

Then
Moose
Beef
Venison
Pheasant/upland
Duck
Wild Turkey

The only chicken or turkey I like is KFC or Drunken Chicken, once your taste buds grasp free range meat farm grown stuff is rather plain.

Since you're probably already enjoying the feast, I'll raise a troubling fact. A few years ago some Wisconsin men who frequented such feast contracted Mad Cow Disease. The last hypothesis I read attributed it to wasting disease in the deer or elk they consumed.

Actually I didn't know this:

Cooking at temperatures above 600 degrees C doesn't kill the infectious agent in TSEs, nor do detergents and enzymes known to kill most viruses. Radiation doesn't faze it, and even after being buried in the soil for three years, enough prions remain to spread the disease. Chlorine bleach is one of the better disinfectants, in concentrations of 50 percent and higher, but sometimes even that has diminished effectiveness. It's difficult to find a neurologist like Antuono willing to autopsy the brain of a patient suspected of dying of a TSE. A splash in the eye of bodily fluid can carry the disease straight to the brain.

Beef by-products are now banned from human consumption in Europe (though not in the United States), but since human TSEs incubate for decades, no one knows what the final human death toll will be. Those who have already died shared one of three genetic variations for the human prion protein, a genetic make-up seen in 40 percent of the population. But "that doesn't mean others are immune," says UW's Aiken. The disease may merely incubate longer in people with other genes

Since some of you are in Loosiana, please tell me what a Neutria is, and is it edible or is it something more like a rat? I've heard of these, but don't have a clear idea of what they are.

It's a giant aquatic rat with tits on its back.

I have eaten it prepared several ways. Smoked sausage is best, with lots of spices. Then grill the sausage and then plop it into a turtle sauce piquant. But that's just me.

The sauce piquant is better without the nutria.
