Job search - questions, advice, and words of wisdom

I was wondering what is the professional thing to do when you apply to multiple places and the job you really want hasn't responded but some of the places that are more your second or third choice have called. Say you go for an interview and was offered the job. Do you accept knowing that (or hoping) there is still the possibility your primary place will call (for an interview or an offer if you have been interviewed)?

Also, when a place calls you, is it professional and considerate of them to ask for an interview later that day? I'd think the proper thing is to schedule one at least a day in advance, giving you some time to prepare. Is a same call/same day interview professional?

And is it professional to say you can't do it on that day but can on another day? Sorta like making your own schedule, which I guess might come across as too prima donna. Or should I sound eager by accepting whatever day they suggest?
