Hey guys!
My next door neighbor came home from a hunting trip to SD the other day with a couple of bucks and hooked me up with some venison. I know some of you guys her are hunters so I figured I'd post how I prepared one of these roasts. First I put the meat in a brine for 24 hours and let it soak. After that I injected it with a mixture of olive oil and apple cider. From there I applied some of my secret rub and wrapped the whole thing in fatty bacon strips held in place with cheese cloth. I put it on the offset smoker at 250 degrees for 8 hours smoking it with apple and hickory and spraying it every 30 minutes with apple cider. As for the results.... Wow! Bambi tastes awesome! This is the first time I've ever tried venison and it's great. Here are some pics of the process. Check it out!

I am DROOLING!

I had a brother-in-law (now ex) that would bag a buck and a doe in both NY and PA. He was always good for some chops, stew meat, and things like sausages, baloney & etc.

I miss eating Bambi

Last time i had it was at a restaurant in Montreal.

I like the idea of smoking the meat. I usually smoke pork and turkey. Now I will have to score some venison and try your recipe.

Anybody in WV or Va want to share some this fall?

Yeah I like that smokey flavor,,,, just not in the Benz! That's why the 500E is parked at the end of the driveway.
