Enchiladas

Up until about 10 years ago, we used to buy Gebhardt brand canned enchiladas. My wife used to use them as the basis for enchilada casserole. Great for picknicks, family reunions, etc. We even used to send canned enchiladas to some friends in Kiribati. Gebhardt stopped making them years ago, and I have not seen canned enchiladas of any brand in any grocery store since. I can find tamales, but no enchiladas.

So today on TV, they were showing folks stocking up on groceries somewhere along the gulf coast hurricane zone, and I caught a quick glimpse of a can of enchiladas going by the scanner. The can was sort of a pale yellow / green color, but I could not catch the brand name. Does anyone out there know of canned enchiladas being available, and, if so, where and what brand?

We happened to be on Christmas Island over Thanksgiving one year. The local expat community has a contest to see who can bring the best non-fish item. We won, hands down... Even the locals liked it, and they don't normally go for anything spicey.

The best part about enchiladas are the margaritas that come with them. Can't get that at a store. Thank God I live in Texas!

Nevada has plenty of good Mexican food too. I'm more into some tamales washed down with horchata though.

Slightly more OT: What prompted these friends to move all the way to Kiribati?

Well, one of them (originally from CA) had been running a dive operation in Turks / Caicos. He and a partner were recruited to start a dive operation on Christmas Island. The partner was a flake and he left years ago, so Kim was able to buy the operation basically for nothing. He married a local, so it looks like he is there to stay.

Another fellow, originally from Scotland, had been overseeing copra plantations on Tabueran and Teraina Is. He ended up running a general store / vehicle rental / auto garage / steveador / etc operation. Also married a local.

Another fellow, originally from Fiji, had been running a theatre on Tarawa. The VCR's killed that business, so he came to Christmas Island and started a tropical fish export business. He has since passed away.

Various others have come and gone over the years,,, Peace Corps folks, missionaries, commuter pilots, TRW tracking station technicians, construction folks, etc.

Things will be tough there for a while as the air service has just been terminated due to deterioration of the coral runway. I suspect it will be a year or two before it opens up again.
