Audacity software

Anybody here have any experience with Audacity software? It is bundled with a number of analog to digital music products. The software is free and it's open source. I am looking at the optioins they have for the file formats created.

They have:
AUP - Audacity Project format
WAV - Windows Wave format
AIFF - Audio Interchange Format
Sun AU/NeXT format
MP3 - MPEG format

I have no idea which one would be the best to use or what the differences are. Anybody know something about these? My goal is to get my vinyl records converted and into I Tunes so I can put them on my I Pod.
