Prices are quick to rise if the apparent justification for them is present. Yet slow to fall back if ever once the original causitive issue is resolved.

One could buy just enough pork product to not exceed the allowed storage time in your freezer would not be counterproductive. The price is bound to rise on the hype anyways if not the actual fact is pretty well a given.

fortunately I just worked out an arrangement with a local farmer and chose one of his pigs as the one id like parts of when its time to slaughter. Its a trade arrangement for automotive stuff.

He feeds his pigs on slop he collects from high end restaurants, so they are exclusively fed on fresh goats milk, artisan breads, and french baguettes. I hope to taste the quality later

Ronald says its primarily made of pork shoulder meat. Im sure they throw a few snouts and anuses in there for flavor though.

Then my butt is a pork shoulder too.
It's mechanically separated pork offal, hearts, stomaches, you know, the good parts, that have been soaked in heavy salt brine to release the salt soluble proteins so they'll stick together almost like meat when the macerated goop is pressed into the little rib shaped molds. Mmmmmmmmm....
