It gets really spicy here in the heat if you don't cut it when it's real young. I make a pureed white bean soup with thyme and rosemary. At the last minute I drop lots of baby arugula into the pot along with plenty of crumbled bacon. Finish bowls with a grate of pecorino romano or good stinky parmesan.

You only need to plant the stuff once I've found. It's a weed. I let it bolt at the end of the season and it reseeds like crazy the next year. I've been meaning to collect seeds and start making sprouts with it, but by the time I remember the plants have already dropped their seed.
