Is it possible NOT to damage the wood when...
removing window switches? I was METICULOUS about not touching the wood. I removed them from pushing from underneath. Yet, STILL a couple flakes of wood popped off. Is this avoidable? I can't see any way it would be avoidable personally.

I have no idea if this would help or not, but maybe first apply some gaffers' tape around the switches, then take the trim out. Who knows, it may work.
