How to remove 126 rear subframe, complete

Let's say I wanted to remove the entire rear subframe from a 126, with axles and pumpkin intact.
How would I support the car properly, so I could put it all back together again?

You need to block the car up high and read a good manual.

Having said that ...I would advise you against it....the bolts that hold the sub frame member to the body will need a cheater bar usually, and breaking them loose with the car on blocks is looking for trouble....
I would respectfully submit you find a shop with a lift to do the job.

Besides the fact that the complete assembly is too heavy to manhandle and awkward to balance.

I remove the rear diff' assembly first along with axles then start on sub frame.
