Oh, you can still just jerk the headrest up out of the backrest, it's just easier with the headrest raised. Easy to replace the motor, just remove the backrest (2 screws on the bottom of the rear cover). You'll see the motor, disconect the wire connector from the motor. The next part is easier if you have the new motor on hand. There are 2 "nubs" that have a slot in them. You just pound the motor assembly to one side (look at the new one to figure out which way it goes) and the motor assembly is free, the new one goes back on just the opposite, engage the slots into the square holes in the frame and pound it the opposite way to lock it in place, reconnect the wiring, etc. One of the chrome shafts has a knob at the end which snaps in to the motor assembly, no trick to it on a 210 like the earlier ones that had a semi-hidden button to push to release the headrest. If you aren't comfortable with removing the headrest, you can remove that rear panel to see what you are doing. To reinstall the rest I'd recommend installing it before the rear panel. I'd raise the motor, then install the headrest. All your seat motor incl the headrest will need to be resynchronized when you're done with all this.
