I'm tired of the headlights/taillights coming on everytime I start up the car, its a 91 500 sl. My highbeams don't even work for some reason either-bulbs are fine,

This is not the answer you are looking for but it is designed this way for safety and it may very well be better left as is.

About the high beams, do they flash when you pull the switch towards you while driving?

If they do, try turning the headlights on with the head lamp switch, and then try the hi beams pushing forward on the turn signal/hi beam switch. They should work.

Hope this helps a bit,
Acky

Daytime running lights were NOT installed in 1991 Mercedes in USA.

Do you have a Canada car?

If not, your car has been modified and you need to have this modification reversed. Alternately, you have a combination switch failure. Combination switch is turn sig + hi/lo + cruise.

what would you suggest me start looking at to fix the combination switch problem, I wonder why anyone would want to install running headlights/taillights to run everytime car is started.

Digging up an old post, but I fixed the high beams (turned out to be the switch on steering wheel), AS for the headlights, my car IS a canadian car. Is there something I can swap out to get rid of this option ?

It's probably the headlight switch.
