My initial thought would be the fuel pump. My VW exhibited the same symptoms when the fuel pump started going bad...i.e., dying at highway speeds, but car could be restarted after a few seconds...

Fuel Pump Relay...........is probably going south. My 380SE did that and if I was fast enough to switch off the key and back on it would start right up.
