I swapped a 1990 300E into my 1989 300SEL without too much trouble. I would think the 1991 would be about the same. I needed to swap the rear most sensor on top of the cylinder head; I think it’s the one for the engine management system. I also needed to remove one extra sensor on top of the head and replace it with a plug from the 1989 SEL. Additionally, the arms that hold the motor mounts on the block need to be swapped, as well as the alt, PS pump, and I think the AC compressor bracket. The 1990 also had an air-pump on it so there was a kind of idler pulley that needed to be removed. There was also a metal air line that ran from the underside outboard end of the intake manifold that ran to the air pump so I put a metal plug in the manifold hole, as the 1989 doesn’t have it. Then there’s a small pipe that also ran to the air pump from a small hole on the cylinder head by the exhaust manifold. It has a bracket and bolt that anchors it to the head. I simply stubbed the pipe and penned it over to plug it. I did it last spring, so this is what I remeber. It worked with my 1990 E swap to my 1989 SEL, so I would THINK it would work for you but I’m no expert.
