new wood/steering wheel

Can anyone tell me how easy (or difficult) it is to replace all the wood in my 230 ce? Some of the glaze has started to crack, and I fancy replacing it all with some walnut.
How is it attached? Adhesive pads? Clips?
Also, Id like to fit an aftermarket steering wheel......how is the old one removed? (this has probably been done to death on here, but bear with me Im a new boy!)
