78 280 Odd Engine Problem!

Hello all!
I have a very specific engine issue on a 1978 280SE I'm working on: It starts very rough (I would say that the cold start is not kicking it at all, from my experience) then purrs like a kitten until the temp reaches 175*. Then some temp switch kicks in and the the fuel pump starts cycling hard and flooding out the engine (you can hear it hum really loud then shut off and repeat that cycle w/ the engine starting to die each time it kicks in).
What would cause both of these issues?!? Anyone have any experience here?
Thanks for any imput as I am stumped, short of replacing the cold start, fuel pump realy, and the Warm up regulator at great expence!

It can't be both the cold start and warm up, can it?
