I've never messed with pulling a tranny out before... will removing the crossmember bolts alone allow the transmission to drop down a bit? I'm not familiar with the mechanics of the tranny-to-engine coupling and I'm worried that I will somehow mess up this coupling if I lower the tranny.

If you remove the crossmember entirely, support the transmission with a jack, then lower the transmission.
