Found it!
Someone offlist toldme to check for excess blowby/ restrictionaswell, Sure enough, I pulled off the poorly cobbled together breather hose that the PO had put on it that was restricted down to about 7mm inside diameter ( the breather fittings are about 15mm inside diameter), and sure enough..no more stalling.
I had ordered a new breather hose last week and won't get it till end of this week, so I made a temp hose out of 3/4"heater hose and it's running great now.

I took it out and it jumped to 80mph effortlessly( could have gone a bunch faster but not safe on that road)
And the smoking has gone way down.
