1/4 pork 3/4 beef.
Lots of garlic, some onions, a bit of celery and some salt. Butt-burning, anus-activating pepper. And (sorry Leo) black beans. Yes, pour it over about 1/4 (vol/vol) rice. Drink with lots of amber beer. |

I made a batch of chili yesterday. Instead of scratchbuilding, I slacked and used Wick Fowler's recipe (cooked in the 'false alarm' mode) and a big shoulder roast because it allows you to simultaneously drink Martinis and cook chili without truly embarrasing results or greasy hamburger build up. Notice, it did not have beans or macaroni in it and, more importantly, nobody at the table even mentioned that they were pining for beans or macaroni... however, I did happen see my bride (who was born in Oklahoma and grew up in Indiana, doesn't cook and is therefore devoid of epicurian refinement) secretly tried to crunch up some crackers in her chili. That's ok...whatever flips her skirt over her head. Once it's in the bowl, it's your's to do with as you please. You can even put beans in it. They just aren't cooked in there.

Leo don't get all riled up like those cartoon people it's chili!
I do agree Macaroni does not work in chili when reheating 15 times it turns to crap. I am going to take a whack at B's chili this week and will follow it with a batch of Bareback chili like yours. |

Crayfish chili? Why not--folks make crawfish boudin, which I find revolting and sacriligious. I am definitely a pig entrails boudin purist. If anybody that eats pig entrails can be called a purist. Hey Leo, if I make crayfish chili, can I put some pintos (beans, not cars) in it? B |

Yum. Yum. and Yum.
Beans. No beans. Rice. No rice. Macaroni. Beer. Bourbon. Cinnamon. Pork. Beef. Venison. Religious. Political. Don’t matter. We’re talk’n chili and it’s all good no matter what your recipe. Ever been to a chili cook-off? There all different. But there all good. That’s why there’s more than one judge. Crawfish Chili? Why not? But I think some may call it “Etoufee“. Someone make some and post a recipe! Maybe I’ll give it a go. We’ve got the weather here for it too. Thanks to you all, for make’n me hungry !!
