I have a weber with the stainless baffles instead of ceramic charcoal. It is very convenient but if I were really after the best flavor I would use hickory, maybe.

I usually just grill beef au naturale but if cooking chicken I often mix up some barbeque sauce with beer and baste it. Mmmmmmmmmmm good.

Anybody here ever cook Salmon on a cedar plank? I cook a lot of Salmon on the grill, but haven't tried that yet. Been wanting to do it, though.
