OMG- s pecial Thanksgiving Dinner THANK YOU TO MRS. AND MR. POWERPIG absolutley awesome dinner adn company. The jalapeno poppers wee deluxe maybe Pig will post the recipe. Rock mac-n-cheese was to die for....thanks guys.

Here's a good way to do your sweet potatoes in a sweet-savory way rather than the god-awful soggy mess most people do with canned ones topped with (gag) marshmallows.

Sweet Potato Tart.

Butter a large tart pan or a 9 x 13 baking dish.
Peel and slice several large sweet potatoes on a mandolin real thin.
Line the bottom of the pan with a single layer of potato slices.
On that layer, grind a little black pepper and sprinkle it with freshly fine grated Parmigiano Reggiano. Not too much.
Add another layer of potatoes and dress them the same way. Keep adding layers in the same manner until the pan is full. A 2 inch deep pan will take at least 4 layers.
About half way through your layers, say the second or third, in addition to the cheese and pepper sprinkle it with real Maple syrup and kosher salt.
Finish the top layer as the others, with cheese and pepper but also brush it with melted butter.
Bake until tender, about an hour and a half, let cool and set for 15 minutes and drizzle the top with more Maple syrup. Cut into squares for service if using a rectangular pan or pie slice sections if using a round tart pan.
