Truth is that age of the animal is the single biggest contributor to flavor. Ours are 24-28 months old when they make the one way trip. Feedlot beef is often as young as 16-18 months.

I was playing devil's advocate more or less. Trying hard to see the positive in what at first seems like a less than tasteful idea.
Myself, I prefer a cow from a pasture over a cow from a commercial corporation. I want to say that I would prefer a commerical cow over a test-tube cow, but I really don't know if someday I might change my mind if I had more information about the whole process.

Now you've got me wanting a nice strip.

Unless you are simply raising a cow, it is all commercial. It is all about making money or you won't be able to raise cows without being fabulously rich. I don't care who is raising it, it is all commercial. When the breeder sold me my dogs, it stopped being commercial. Before then, it was commercial. The only difference in that case is one is pastured and the other is fed in some other way. One tastes like soft leather and the other has a better flavor. Meat of the beef that has been set on the pasture seems tougher, not as tender and the mega farms beef. Take the deer in WI. In the south, the have a nicer taste, in the north the have a more gamey taste. Why? In the south, they get to feed on less pine cones and have a less gamey taste.

Well if it is from a good cow and the process is to duplicate what was in the cow, why not?
