FWIW, Kobe beef is simply prepared cuts of black Waygu.

Waygu is unbelievably marbled...but, you have to remember that the Japanese cooking mode is to boil a piece of Waygu about the size of a pack of cigarettes, use the resulting broth to cook a couple of cups of noodles and then serve the noodles and steak to four people.

Good to know. It might be a tad low but I don't want to charge my customers $14/lb for a bone and I like having the bone in to help slow the cooking down some.

I'm talking the whole muscle with the chain. That's how they sell it at Costco and that's how buy mine. Trimmed is probably a lot more.

But I think $6 a pound for a half is very reasonable.

If it is $6 a pound for a half and the half is a huge chunk of meat you have to butcher then it might not be the true cost. After all, nobody eats it by gnawing it till it is done. IF it is cut up into the proper cuts and it comes out to that price, you are right. You need to compare apples to apples.

Too lazy to go back and look right now but I'm pretty sure I mentioned it's cut, wrapped and frozen. In addition, I have it cut to the buyer's specs. If they want more roasts than steaks or vice versa, or particular thickness on steaks etc. it all costs the same. Offal and bones are included if specified too, if not, no problem. I take all the offal others don't want for my guard dogs.

Well, for that price, I can say that as long as it passes a taste test, I would say it is a good deal. I bought in bulk and it was more than that. It was cut, wrapped and frozen but it wasn't that cheap. Unfortunately the first batch was ok and it has gone downhill. Used to be, when the wife cooked, there was a nice smell all over the house. This batch doesn't give off a nice smell and doesn't taste as good so since that is the trend, I will give up on them and go back to the grocer.

I believe I can get an insulated shipping container and dry ice from Airgas in Austin...if that's the case, I'll be able to ship tomorrow when I go in to make deliveries. I'll ship via FedEx 2-day. You should have those parts this Friday.
