Crunchy, salty, and almost 100% pure fat, chicharrones are the original Mexican snack food. fried pork rind, also known as chicharrones (chee-char-own-es), are the result of a poor people’s desire to use every part of the pig. Years ago, Mexican families and neighbors regularly got together for matanzas, or community hog butcherings. Every family pitched in to help butcher and clean the hog and left with their share of the animal. No part of the hog was wasted. In addition to meat, the hog also provided tripe, hogs head cheese, organs, pigs feet, ears, and the tail. Fat was scraped off of the remaining skin to produce lard for cooking, and finally, the remaining skin and attached fat was shaved (hogs are hairy), cut into bite sized cubes and fried to produce chicharrones. After being removed from the fryer, the chicharrones were seasoned and served. I’ll bet your favorite snack food doesn’t require shaving. Made of almost pure saturated fat and heavily salted, these delicious treats have no doubt contributed to Mexico's high rate of diabetes and heart disease. While most Mexicans don’t eat fried pork skin as often as their parents once did, chicharrones remain a guilty pleasure amongst Mexicans....

Virtually every culture that put pork on their plates has a similar dish. The kosher version, made from chicken skins, gribenes, is also a delight.

Haven't tried gribenes. I'm guessing they maybe aren't packaged?

I don't think his post hinted at the sort of fanaticism that you imply. I eat at Taco Bell maybe once every week or two and at KFC once every two months approx. I'm not going to freak out about the MSG but I also suspect I'd be better off w/o it.

And I like Swiss cheese so I can't imagine a day without it. But I realized a long time ago that there are problems with the quality of Swiss cheese at Subway, so I take it elsewhere. Only there is one unpleasant moment. Unfortunately, my health condition does not allow me to eat cheese with mold. I found out about this when I was on a business trip in London. At the conference, we were treated to different kinds of cheeses and that evening I felt bad. My co-workers advised me to send a few strands of hair to this lab https://www.intolerancelab.co.uk/original for examination, to take a test for food intolerance and allergens. I did so and found out about my mold allergy. I know this is an unpleasant story, but I told it in case it would be useful for someone to know about it. That's why I eat all kinds of cheeses, except those with mold.

I know it isn't haute cuisine but it does the trick in a pinch .

I miss the old Hoagie shops Down East where a guy named Guido would make your grinder to order...

I hit up Subway now and then, I always load it up with a lot of green stuff, still unhealthy but tastier...
