Thanksgiving Recipes

How about favorite recipes for Brine? I've heard that brinning a turkey is the ONLY way to cook it.
I have been tasked with brinning the bird. My son sent me a recipie with ginger, cloves, cardamom pods (?), allspice and peppercorns.

As for the brine recipe . . . don't forget the salt. Tons of brine recipes are available, but it's the method that's important to avoid food contamination. Most folks don't have enough fridge room (unless you have that every so handy second fridge), so a good sized ice chest cooler works great; but remember to sanitize it before and after with a weak bleach solution, 1TBL per Gal of water, and use ice cubes as part of your recipes water element, so that the food stays in the safety zone, which is under 40F.

While I'm against putting any stuffing/dressing inside the cavity, this recipe linked from Wired Magazine caught my eye. It's your basic meat, stuffed with meat!

White Castle Stuffing
10 White Castle hamburgers, no pickles
1 1/2 cup celery, diced
1 1/4 teaspoon ground thyme
1 1/2 teaspoon ground sage
3/4 teaspoon coarsely ground black pepper
1/4 cupchicken broth

Directions:

In a large mixing bowl, tear the burgers into pieces and add diced celery and seasonings. Toss and add chicken broth. Toss well. Stuff cavity of turkey just before roasting.

Allow 1 hamburger for each pound of turkey, which will be the equivalent of 3/4 cup of stuffing per pound.

I'm spatchcocking a Turkey and cooking it on the Big Green Egg. Also a Smoked Ribeye Roast and of course the sides: Fresh Cranberry Relish, Oyster Cornbread Dressing, Fresh Green Beans, Sweet Potatoes and for the appetizer, Jalapeno Peppers stuffed with cream cheese and cheddar and wrapped in bacon.

Hope the street people I invited over appreciate it.
