Looks like the Victor Reinz Valve seals are made with Viton®:

Jamie, you already got your answer about head removal. I did not had to remove the head, neither you have to do on your car. The only special tool I needed was "Valve Spring Compressor", it is a mercedes specialty tool for overhead cams. None of the rental ones work for this job. Mercedes tool is very expensive, but closest alternative is KD tool(KD 3087). I paid $65.00 with shipping for the valve compressor, for the most part it worked fine.

It depends upon on your skill level. I would say if you are medium DIYer, it should take you 6 ~8 hours. It is not that difficult of a job, you spend more time taking stuff away before start working on the actual seals. Make sure you cover all the passages going to the engine with rags, those little half cone locks are easy to drop. Do not ask how I know .

I just got confirmation from Germany that Victor Reinz makes 2 different seal applications for the W124 (not sure about other models). A standard and a premium. The premium are Viton®. The ones I purchased pictured below are indeed Viton®.

carson356: I wonder if the ones you've used in the past were the Viton® or standard ones?
