Have just purchased a 1981 W126 - 280 SE. When giving this a full circle turn the steering seems to shudder and the wheels make a sqeel even at almost stopped pace. Any idea on what is wrong.

Also what position / reading should oil pressure dial be at ?

It's not just a slipping power steer drive belt is it? The squeel occurs when the belt slips and the shudder is the pump engaging and disengaging as the belt provides drive and then slips again. Just a thought.

Sounds like you're holding the wheel at full lock when turning. The pump will talk to you when you do that, it is saying "ouch" .

Oil pressure should be up to 3 at anything above idle or when the engine is cold. At idle, it could be as low as 1 (maybe even .75 bar) when hot.

That could all be true.

However, if the squeal comes on only when the engine has been out running hot, it could be expansion of a new belt thats causing the squeal.
