In hot climates most people usually bypass the high-pressure switch (if faulty) and let the fan work all the time. Probably not your case since you have seen it come on. The only thing I can think of is that the switch is faulty and getting stuck once the pressure builds up. Either that or you haven't waited long enough for the pressure to drop thus shutting of the fan.
