I'm assuming the 98 E300 Turbodiesel engine and exhaust system has an oxygen sensor, maybe even more than one. My questions are how many are there? Where are they? How often do they need to be changed? And how do I go about changing them?

Not sure in your model. For my 87 Camaro, the O2 sensor was downstream of my exhaust manifold on my exhaust and I changed it when the "Engine Warning" or Engine something light came on. You can also look into replacing it if you are failing your emissions tests in your state.
