No I don't think there has ever been a manual V8, I am sure though that a Getrag 5spd or something similar could be used. A bellhousing would be needed that would suit, hardest part is probably the flywheel and the spigot bearing in the crank that supports the input shaft of the manual gearbox. Both these would need to be custom made which would be quite expensive.
