Keeping it simple, gasoline is a lot of complex hydrocarbons and additives. Over time, they "gunk up", which is to say turn sticky, get gummy and ultimately stop not burn well and clog up things that shouldn't be clogged.
If you car is fuel injected, the gummed up junk can get things stuck open or stuck closed. Either way, the car won't run right, perhaps dumping too much gas into they cylinders (and thus burning rich).
Figure gasoline is good for about a year and becomes a liability after 2 years.
Getting parts cleaned is sometimes more than they're worth. Sometimes paying somebody else to do it iss more than the car is worth.
