I'd like to do these myself since last time I took my 300E into the indy he took me for close to 4bills for new pads & rotors all around.
3- Is there anything else I should look for for wear & tear in addition with wheels off?

Rear discs are perhaps the easiest of the ones to replace--But when you do them, best get a set of hand-brake shoes and a fitting-kit too, as these are under the discs.....
Just remove the brake-caliper and the small set-screws holding disc to hub, and the disc will come off exposing the hand-brake mech...
Be sure to clean the mating face of the hub before fitting the new discs as any eccenticity will quickly wear the disc 'out-of-round' as it were and you'll have brakes that judder with wheel rotation....
For front discs, you'll need to drop out the wheel-bearing and pull the whole hub off--The bolts that hold the disc are on the inside....Not hard, just a little more work...
Not sure what to suggest about your wheel-nuts--Maybe a trip to local tyre-place for them to use their air-tools on them....
