I read somewhere that others have found that stuff in the freezer never gets cold because the thermostat works based on the outside ambient temperature...but those were units sitting in hot garages in the summer.

I don't think the mechanicals will be an issue, but you may have to search for a different thermostat unit specifically for the use that you are planning for.
