What to do guys and gals?

As a reasonable looking early 30s guy, the few women I would go and say Hi! to usually aren't interested. My closest friend says I'm too 'choosey where women are concerned, but thats a good thing' Rofl.
Anyway the question is this. What should one say after Hi! when you don't care for football or TV soaps (including Dallas. Lol)?

The reason for asking?
I came across (very briefly, barely met in passing) a nice looking, pleasant seeming, intelligent lady recently - pretty much the ideal specification, really, don't you think! - and she has emailed regularly for a month and now wants to 'meet for coffee'.
I'm usually criticised for being 'quiet', although I'm more intellectual and reserved, but look more like a flyhalf rugby player.
The cloud looked at first like it did have a silver lining - with diamonds encrusted. Yippee! Then of course I found the gaping black hole - there can only be me that would manage this one. Lol
I came across her when in Lincoln, UK, but was told her funny (as in pleasant, but unusual) accent was from Boston. Foolishly I said, 'Well, 45 minutes drive time, but not too bad.'
'No' she said. 'Boston, Massachusetts.' The heart is sagging at this point! Rofl.
Now, I'm no navigator, but I'm sure it is more than 45 minutes to Boston, Mass!
A few conversations later she told me: 'If I want to go back for my parents in a couple of years, you would have to be good with that.' and of course she nearly scared me to death with the idle comment 'I want children, at least two.' just a little later.
While quivering in a terrified heap, I'll ask: Should I make an effort for this lady or run away quickly? What say you? Lol.
