Don't mind the old purists-there's a time for restoration, and a time for modding. I'd rather see a slammed w115 with a hunk of iron v8 in it that actually gets driven. 302 is a great choice, IMO. Tons of aftermarket support. Consider the all-too-frequent alternative-the original owner dies, the kids don't know what to do with it, and it gets scrapped.

If you have to cut the braces just weld/bolt in new ones that fit around the engine. Easy-peasy.

Can you sink a rear-facing pan in there?

For the rear end-unless you stand on it you will be A-OK. If it pops, break out the measuring tape and make a v8 Mercedes rear end fit.
