Valve clearances...

Cold
I .10 mm
E .20 mm

Hot
I .15 mm
E .25 mm

I wouldn't do any head retorquing unless I felt a loose bolt. When adjusting valves set them as close to spec as possible but with any err favoring additional clearance, never tighter clearance. Aim for slight drag on an oiled feeler gauge.

Make a drawing of the camshaft identifying inlet and exhaust valves then write the clearance on the cardboard next to each valve and check them off methodically when completed.

Do a compression test after the valve adjustment.

I'd use a "C" oil rated for diesels in that car because it is a flat tappet sliding camshaft vs a roller cam. Flat tappets like extra ZDDP in the oil to prevent wiping out the camshaft lobes
